Chia Lemon and Raspberry

Chia seeds come from a native South American plant called Salvia Hispanica which is closely related to mint. Chia is an ancient Mayan word meaning strength and Chia seeds were used by the Mayans and the Aztecs for sustainable energy.

Calorie for calorie they are one of the best sources of nutrients in the world. In just 28 gr of Chia Seeds there are only 137 calories and 1g of digestible carbohydrate, plus:

Adaptations

Snip 12Use 50% Chia and 50% oats

Snip 10the Chia Seeds in these recipes cost 87p per portion. You can modify the toppings to make them cheaper. e.g. peanut butter instead of tahini, frozen fruit instead of fresh, cocoa instead of cacao (note you will miss out on nutritional benefits here)

Raw Cacao and Orange Chia Pudding (serves 1)

Chia Choc Orange

Ingredients

  • 1/4 cup (35g) Chia Seeds
  • 170 ml milk of your choice – I use unsweetened almond milk
  • 1 tsp raw cacao
  • 1 tsp carob powder (optional)
  • Zest of 1 orange
  • 1/2 tsp xylotol

Method

  1. Mix all the ingredients into a jar, bowl or tub
  2. Stir well
  3. Seal and refrigerate overnight

Lemon and Raspberry Chia Pudding (serves 1)

Ingredients

  • 1/4 cup (35g) of Chia Seeds
  • 170 ml of milk of your choice – I use unsweetened almond milk
  • 1/2 tsp vanilla extract
  • Zest of 1 lemon
  • 2 oz of raspberries fresh or frozen

Method

  1. Mix all the ingredients into a jar, bowl or tub
  2. Stir well
  3. Seal and refrigerate overnight

Banana and Tahini Chia Breakfast Pot (serves 1)

Chia Banana and Tahini

Ingredients

  • 1/4 cup (35g) Chia Seeds
  • 170 ml milk of your choice – I used unsweetened almond milk
  • 1/2 banana mashed
  • 1/2 tsp vanilla extract
  • 2 tsp tahini

Method

  1. Mix all the ingredients into a jar, bowl or tub
  2. Stir well
  3. Seal and refrigerate overnight

Chai Chia Pudding (serves 1)

Chia Chai

Ingredients

  • 1/4 cup (35g) of Chia Seeds
  • 170 ml milk of your choice – I use unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cm fresh ginger grated
  • Pinch of ground cloves
  • 2 cardamon pods
  • Zest of half an orange

Method

  1. Crush your cardamon pods and extract the middle seeds, throwing away the outer casing
  2. Mix all the ingredients into a jar, bowl or tub
  3. Stir well
  4. Seal and refrigerate overnight

Mango and Passion Fruit Chia Breakfast Pot (serves 1)

Chia Mango and Passion

Ingredients

  • 1/4 cup (35g) Chia Seeds
  • 170 ml milk of your choice – I use unsweetened almond milk
  • 50 g frozen mango chunks
  • 1 passion fruit
  • 1/2 tsp vanilla extract

Method

  1. Mix all the ingredients, except the passion fruit,  into a jar, bowl or tub
  2. Stir well
  3. Seal and refrigerate overnight
  4. Top with passion fruit in the morning
