Grain Free Tuna and Courgette Fritters with Creamy Avocado Dip

Tuna Fritters

Full of protein and healthy fats, quick and easy to make, from store cupboard staples, its a go to lunch or snack for me when I am in a hurry or when supplies are running low. Best eaten hot but can be eaten cold as a packed lunch or snack too. Also nice for dunking in soup!

I got the inspiration from Joe Wicks the Body Coach’s Lean in 15 book. You can follow his blog here.  He also does a really nice Tuna and Courgette Fritter but I wanted to make them grain and gluten free, and have added chives for a bit of extra flavour.

Substitute the tuna for  tinned or flaked salmon if you want to increase the omega 3’s or need to use up some left overs from my (insert link)

Grain Free Tuna and Courgette Fritters with Creamy Avocado Dip (makes about 12 small ones)

Ingredients

  • 1 tin of tuna or salmon or 100 gr fresh cooked flaked salmon
  • 1 small courgette grated
  • 1 egg beaten
  • 1/2 bag of fresh chives, finely chopped
  • 40 gr tapioca starch
  • 40 gr quinoa flour
  • Milk of your choice – I used  unsweetened almond milk
  • Cooking fat of your choice – coconut oil, olive oil etc
  • Salt and pepper to taste
  • Delicious Creamy Avocado Dip

Method

  1. Put the tuna, grated courgette and chives in a bowl and mix to flake out the tuna
  2. Add the tapioca starch and quinoa flour and mix again
  3. Add the beaten egg and enough milk (about 100 ml) to form a thick batter
  4. Season with salt and pepper
  5. Heat the oil in a frying pan and spoon in little puddles of the batter
  6. Fry until golden and then flip and cook the other side
  7. Serve with Delicious Creamy Avocado Dip

Adaptations

Snip 13Substitute the fish or a tin of sweet corn lightly smashed

Snip 12serve with a jacket potato or in a sandwhich

Snip 2You can  freeze half the batter (before you have fried) for another time or double up the quantities so that you always have some on hand). It will also keep in the fridge for 24 hours for tomorrows lunch)

Capture Courgettes are lovely, grated raw into salads and can be added to stir-fry, ratatouille and and bolognaise
